How about some Crunch-Coconut with Blissful Banana Dog Cookies?
For this recipe you will need:
1 over ripe banana
1 cup of rice flour
1 egg
2 teaspoons of coconut oil
A sprinkle of chia seeds
2 tablespoons of desiccated coconut
and...
Of course, a willing taste tester! (or two)
But desiccated coconut makes these cookies even crunchier, hence the name
Crunch-Coconut
To make this you will need to preheat your oven to 180 degrees Celsius or 350 degrees fahrenheit
Line a baking tray
Mix all ingredients together
To form a dough
To shape the cookies, I kind of rolled the dough into a log and cut slices
I sprinkled some with extra chia seeds for decoration
Bake in the oven for 10-15 minutes or until golden brown
Then...
